Spaghetti Carbonara

Ingredients

  • 7ozSpaghetti
  • 2tbspOlive Oil
  • 3ozGuanciale (diced)
  • 3clovesGarlic (chopped)
  • 1tspBlack Pepper (cracked)
  • 4eaEggs (yolks only)
  • 3ozParmesan Cheese (grated)
  • to tasteKosher Salt
  • 1tbspParsley (chopped)

Method

1.Cook pasta in plenty of boiling salted water.
2.Meanwhile saute Guanciale until browned nicely and add garlic and cook until fragrant. Add pepper and cook for a further 30 seconds.
3.Add pasta and combine. Once combined add egg yolks and ½ cup of pasta water, stir vigorously. Season to taste, toss through parmesan and Parsley and serve.

  • to tasteKosher Salt
  • to tasteBlack Pepper (cracked)
  • 2tbspParsley (chopped)
  • 2ozParmesan Cheese (grated)

Method
