Spaghetti Carbonara

Ingredients
- 7ozSpaghetti
- 2tbspOlive Oil
- 3ozGuanciale (diced)
- 3clovesGarlic (chopped)
- 1tspBlack Pepper (cracked)
- 4eaEggs (yolks only)
- 3ozParmesan Cheese (grated)
- to tasteKosher Salt
- 1tbspParsley (chopped)
Method
1.Cook pasta in plenty of boiling salted water.
2.Meanwhile saute Guanciale until browned nicely and add garlic and cook until fragrant. Add pepper and cook for a further 30 seconds.
3.Add pasta and combine. Once combined add egg yolks and ½ cup of pasta water, stir vigorously. Season to taste, toss through parmesan and Parsley and serve.
